Beginning Thursday, March 11, visiting award-winning Chef Roy Yamaguchi will be introducing new menu items at Roy's restaurant located at Hilton Guam Resort & Spa for a limited time.
Yamaguchi, restaurant entrepreneur and namesake of Roy's restaurant, will join the local Roy's kitchen team for three nights to showcase promotional menu items. New menu items include a handful of appetizers, salads and soups such as hamachi sashimi with avocado, ruby red grapefruit and jalapeno ponsu, clams with chorizo, oranges, fennel and curry, lobster karaage chopped salad with dried miso vinaigrette, shrimp, crispy baby artichoke with Belgian endive, bleu cheese and walnut vinaigrette, and oxtail dumpling with pho broth. For entrees, Yamaguchi will introduce dishes like sousvide of Australian Wagyu beef filet with a horseradish mustard crust and root vegetables, breast of duck with parsnip puree and assorted seasonal vegetables, salmon with sweet onion soubise and white wine cream sauce and olive-oil poached hamachi with arare crunch, prosciutto and parsnip puree.
