New to the Hilton Guam Resort & Spa restaurant is an open sushi counter, where Hawaiian fusion sushi is prepared and sent to your table fresh. On the new menu is the Hawaiian Sushi Sampler, which includes tuna, hamachi, shake, shiromi, red snapper, unagi and a spicy tuna roll. Other Hawaiian sushi menu items include Auntie Lei's Aloha Roll, which is a fine combination of spicy tuna, kaiware, cucumber, yellowtail, salmon, avocado and garlic ponzu. Other items include Sunrise at Haleakala – a mix of tuna, yellowtail, salmon, avocado, asparagus crispy foll and spicy butter sauce, and the Spider Maki, a sushi dish created with tempura soft shell crab, kaiware, avocado, tobiko, and tangy ume aioli. Many other sushi and sashimi selections are available at the restaurant nightly. In addition to the new Yamaguchi Sushi and Sashimi menu are some menu items for your discerning palate. New menu items include Scallops topped with Melted Foie Gras, Taro-Leaf Infused Spicy Escargot, and Blue Cheese and Porcini Buttered 8 oz. Filet Mignon, among others.
